Eric and I are obsessed with this china bistro called PF Changs, bad thing is the closest one is at least a 30 minute drive away. They have these AMAZING CHICKEN LETTUCE WRAPS!!! So this time we made them at home. Try it out and let me know what you think. Chicken Lettuce Wraps

Ingredients

  • 3 tablespoons oil
  • 1lb ground chicken breast
  • 1 cup water chestnuts
  • 2/3 cup mushrooms
  • 3 tablespoons chopped onions
  • 1 teaspoon minced garlic
  • 5-6 leaves of iceberg lettuce

SPECIAL SAUCE

  • 1/4 cup sugar
  • 1/2 cup water
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon lemon juice
  • 1/8 teaspoon sesame oil
  • 1 tablespoon hot mustard
  • 1-2 teaspoon garlic chile paste

STIR FRY SAUCE

  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon rice wine vinegar

Directions


Make special sauce by dissolving the sugar into a small bowl. 
Add soy sauce, rice wine vinegar, ketchup, lemon juice and sesame oil.

Make the special sauce by dissolving the sugar in water in a small bowl.

Add desired amount of hot mustard and garlic chili paste to sauce. Mix well.

Bring oil to high heat in large frying pan.
Cook chicken thoroughly. Drain any remaining liquid.
Place chicken back in pan. 
Mince water chestnuts, onions and mushrooms to small pea size.

Prepare the stir fry sauce by mixing soy sauce, brown sugar and rice wine vinegar in small bowl.
Place chestnuts, onions, mushrooms and stir fry sauce in pan with chicken.

Sauté for a couple minutes, serve in lettuce bowls with desired amount of special sauce.
